Preheat your oven to 200 degrees Celsius.

Dice the white potatoes and place them onto a baking tray. Drizzle with olive oil and season with minced garlic, salt, pepper, chilli flakes, and mixed herbs. Toss to ensure everything is evenly coated.

Pop the baking tray with the seasoned potatoes into the preheated oven for 20 minutes.

Remove the potatoes from the oven. Add the diced red onion, tenderstem broccoli, and baby plum tomatoes to the tray. Break the veggie sausages into pieces and add them to the tray. Spoon over the red pesto.

Give everything a good mix on the tray to combine all the ingredients thoroughly.

Pop the tray back into the oven for another 15 minutes.

When the timer is up, remove the tray from the oven and check that the potatoes are soft. Layer the torn mozzarella pieces evenly on top of the mixture.

Return the tray to the oven for 5 minutes, or until the mozzarella has melted and is bubbly.
