Put on gloves. Slice the 1 pound of jalapeños into thin rounds. Set them aside.

Slice the 4 cups of peaches into thin pieces, roughly the same size as the jalapeño slices. Set them aside.

In a large pot, combine the apple cider vinegar, white vinegar, granulated sugar, mustard seed, celery seed, turmeric, and cayenne pepper.

Stir the mixture well and bring it to a simmer over medium heat. Simmer for 5 minutes, or until all the sugar has completely dissolved.

Add the sliced jalapeños and peaches to the simmering syrup. Stir to combine.

Bring the mixture back to a simmer and let it cook for another 10 minutes.

While the mixture simmers, ensure your canning jars (pint size shown) are clean and ready.

Carefully pack the hot jalapeños and peaches into the clean pint jars, leaving enough space for the syrup. Then, ladle the hot syrup over the jalapeños and peaches, making sure they are fully submerged and leaving 1/2 inch of headspace from the rim of the jar.

Use a bubble remover tool or a non-metallic utensil to remove any trapped air bubbles from the jars.

Wipe the rims of the jars clean with a damp cloth to ensure a proper seal.

Place the lids and screw bands onto the jars, tightening them to fingertip-tight.

Place the filled jars into a large stock pot or canning pot. Ensure the jars are covered by at least 1 inch of water. Bring the water to a rolling boil.

Once boiling, process the jars in the boiling water bath for 10 minutes.

Carefully remove the hot jars from the water bath using a jar lifter. Place them on a wire rack or a clean towel to cool completely for 12-24 hours without disturbing them. You should hear popping sounds as they seal.

After cooling, check that all jars have sealed properly (the center of the lid should be concave and not flex when pressed). Store sealed jars in a cool, dark place. Any unsealed jars should be refrigerated and consumed within a few weeks.

For the best flavor development, allow the peach cowboy candy to sit for at least 2 weeks before opening.
