Preheat your oven to 400°F. Line two large baking sheets with parchment paper for easy cleanup.

In a large mixing bowl, combine the peeled and cut sweet potato fries with olive oil. Toss until the fries are evenly coated.

Sprinkle the cornstarch, paprika, garlic powder, 1/2 teaspoon salt, and black pepper over the sweet potatoes. Toss again thoroughly until all fries are lightly coated with the seasoning mixture.

Arrange the seasoned sweet potato fries in a single layer on the prepared baking sheets, ensuring they are not overcrowded. This helps them crisp up rather than steam.

Bake for 15 minutes, then carefully flip the fries using a spatula. Continue baking for another 10-15 minutes, or until the fries are golden brown and crispy to your liking.

While the fries are baking, prepare the honey mustard dip. In a medium bowl, whisk together the mayonnaise, Dijon mustard, honey, apple cider vinegar, cayenne pepper (if using), and 1/4 teaspoon salt until smooth and well combined.

Once the sweet potato fries are done, remove them from the oven. Serve immediately with the homemade honey mustard dip on the side.
