In a medium non-stick pan, add the honey and ground cinnamon. Stir to combine.

Add the diced apples to the pan. Place the pan over medium-low heat.

Sauté the apples, stirring occasionally, for 10-12 minutes, or until they soften and begin to caramelize and turn a light brown color. The apples should be tender but still hold their shape. This process helps to loosen the fiber and makes them easier to digest.

Remove the pan from the heat and set aside. The apples and any remaining caramel sauce will be used for assembly.

Divide the plain Greek yogurt evenly among 4 serving bowls.

Spoon 1/4 cup of unsweetened applesauce on top of the Greek yogurt in each bowl.

Evenly distribute the caramelized apples over the applesauce in each bowl.

Drizzle any remaining caramel sauce from the pan over the apples in each bowl.

Sprinkle 2 tablespoons of chopped walnuts over the top of each serving. Serve immediately and enjoy!
