Heat 2 tablespoons of cooking oil in a pan over medium heat.

Sauté the minced garlic and chopped onion until fragrant, about 2-3 minutes.

Add the cubed pork belly to the pan and brown it on all sides, cooking for about 5-7 minutes.

Pour in 1/2 cup of soy sauce and 1/4 cup of white vinegar.

Add 1 teaspoon of whole black peppercorns and 2 bay leaves.

Bring the mixture to a boil, then reduce the heat to a simmer.

Add the diced tomatoes to the pan.

Pour in 1 cup of water.

Cover the pan and let it simmer for 30-45 minutes, or until the pork is tender and the sauce has slightly thickened. Stir occasionally to prevent sticking.

Taste the adobo and add salt as needed to adjust the seasoning.

Serve hot, preferably with steamed rice.
