Place a medium saucepan over medium heat on your stovetop.

Add 1 cup of the pan drippings to the heated saucepan. Allow the drippings to heat through for about 1 minute.

Sprinkle the all-purpose flour into the hot pan drippings. Whisk continuously for 2-3 minutes to create a smooth roux. It should be light golden brown and have a paste-like consistency.

Gradually pour in the remaining 1/2 cup of pan drippings, whisking constantly to incorporate it into the roux and prevent lumps.

Slowly add the water or chicken stock to the mixture, whisking vigorously until the gravy is smooth and begins to thicken. Bring it to a gentle simmer.

Stir in the unsalted butter until it is fully melted and incorporated into the gravy.

Pour in the heavy whipping cream and continue to whisk until the gravy reaches your desired consistency. Season with salt and black pepper to taste.

(Optional) If a thicker gravy is desired, in a small bowl, whisk together the cornstarch and cold water to create a slurry. Slowly pour the cornstarch slurry into the simmering gravy while whisking constantly. Continue to simmer for 1-2 minutes until the gravy thickens to your preference.

Serve the hot homemade gravy immediately over slices of garlic and herb Cajun turkey or other preferred dishes.
