Prepare the steak: In a medium bowl, toss the bite-sized sirloin steak pieces with 1 tablespoon of olive oil, salt, black pepper, onion powder, garlic powder, and paprika until evenly coated. Set aside.

Prepare the shrimp: In another medium bowl, toss the peeled and deveined shrimp with 1 tablespoon of olive oil, salt, black pepper, onion powder, garlic powder, and paprika until evenly coated. Set aside.

Cook the steak: Heat a large skillet over medium-high heat. Add the seasoned steak and cook for approximately 4 minutes per side, or until desired doneness. During the last minute of cooking, stir in the Worcestershire sauce. Remove the steak from the skillet and set aside on a plate.

Cook the shrimp: Using the same skillet (no need to clean), add the seasoned shrimp. Cook for 3 to 4 minutes, stirring occasionally, until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside with the steak.
Warm the crab meat: In the same skillet, add the lump crab meat and gently warm through for 1 to 2 minutes. Remove from the skillet and set aside.
Prepare the queso sauce: In a medium saucepan, combine the sliced white American cheese, cubed Pepper Jack cheese, undrained diced green chilies, and evaporated milk. Heat over low heat, whisking constantly, until all the cheese is fully melted and the sauce is smooth and creamy. Keep warm over very low heat.

Cook the fries: While the queso is simmering, heat the vegetable oil in a deep fryer or large heavy-bottomed pot to 350°F. Carefully add the frozen crinkle-cut fries in batches (if necessary) and deep-fry until golden brown and crispy, about 6-8 minutes. Remove with a slotted spoon and drain on a paper towel-lined plate. Lightly salt the fries immediately after cooking.

Assemble the Surf and Turf Fries: On a large serving plate or platter, create a generous base with the hot, crispy crinkle-cut fries. Layer the warmed lump crab meat over the fries, followed by the cooked seasoned shrimp, and then the cooked seasoned steak pieces. Finally, generously pour the warm, creamy queso sauce over the entire dish.
