Prepare the chicken wings: In a large bowl, combine the chicken wings with 2 tablespoons fish sauce, 1/2 tablespoon sugar, 1 tablespoon chicken powder, and 4 tablespoons ABC sweet soy sauce. Mix thoroughly with your hands until the wings are evenly coated. Cover and refrigerate for at least 3 hours, or preferably overnight.

Prepare the lemongrass ribs: In another large bowl, combine the baby back ribs with 2 tablespoons fish sauce, 1/2 tablespoon sugar, 1 tablespoon chicken powder, 2 tablespoons oyster sauce, 1/2 tablespoon seasoning sauce, and 2 tablespoons minced lemongrass. Mix thoroughly with your hands until the ribs are evenly coated. Cover and refrigerate for at least 3 hours, or preferably overnight.

Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil and place an oven-safe rack on top. Arrange the marinated chicken wings in a single layer on the rack.

Bake the chicken wings for 45-55 minutes, flipping halfway through, until golden brown and cooked through. For extra crispiness, you can broil for the last 2-3 minutes, watching carefully to prevent burning.

While the wings are baking, prepare the ribs. Preheat your oven to 300°F (150°C). Place the marinated ribs on a large piece of heavy-duty foil, ensuring there's enough foil to wrap them completely. Seal the foil tightly to create a packet.

Bake the ribs for 2 to 2 1/2 hours, or until very tender. Once tender, open the foil packet and increase the oven temperature to 400°F (200°C). Bake for another 15-20 minutes, or until the ribs are nicely caramelized and slightly crispy.

While the meats are cooking, prepare the papaya salad. In a large mortar, add the chilies (to taste) and 2 garlic cloves. Pound these together using a pestle until well crushed.

Add the desired amount of long beans (if using) to the mortar and lightly pound.

Add the shredded green papaya to the mortar.

Pour in 5 tablespoons fish sauce, 3-4 tablespoons sugar (or palm sugar), and the juice of 1 1/2 to 2 limes. Add 4 tablespoons padaek, 1 teaspoon MSG, and 1/4 to 1/2 teaspoon shrimp paste.

Add optional tomatoes (cut into wedges) and cucumber slices (if using) to the mixture.

Gently pound and mix all ingredients together in the mortar with the pestle until well combined and the flavors are integrated. Be careful not to over-pound the papaya.

Taste the papaya salad and adjust seasonings as needed, adding more lime, sugar, fish sauce, or chili to your preference.

Once all components are cooked, serve the Papaya Salad, Chicken Wings, and Lemongrass Ribs immediately.
