Heat a large pot or pan over medium-high heat. Add the olive oil.

Add the chopped onion to the pot and sauté until softened, about 3-4 minutes.

Add the minced garlic and cook until fragrant, about 30 seconds.

Add the beef mince to the pot. Brown the mince, breaking it up with a spoon as it cooks, for about 5-7 minutes.

Once the mince is browned, drain any excess fat if necessary. Add the tomato paste and fajita or taco seasoning. Stir to combine and cook for 1 minute.

Add the long grain white rice to the pot and stir it into the mixture, ensuring it's well coated.

Pour in the chicken stock/broth.

Add the chopped capsicum, corn kernels, and black beans to the pot.

Stir all the ingredients together well to ensure even distribution.

Bring the mixture to a simmer, then cover the pot with a lid. Reduce the heat to low and let it simmer for 15 minutes, or until the liquid has been absorbed and the rice is cooked through.

Remove the lid and sprinkle the shredded cheese evenly over the top of the rice mixture.

Replace the lid and let it sit for 2-3 minutes until the cheese is melted and gooey.
