Place the chicken necks, chicken backs, and chicken feet in a large pot. Cover with cold water and bring to a rolling boil over high heat. Boil for 15 minutes to remove impurities and scum. Skim off any foam that rises to the surface.

While the chicken is boiling, char the yellow onion and ginger piece. This can be done directly over a gas burner flame until blackened, under a broiler until deeply colored, or in a dry steel pan over high heat until well-charred on all sides.

Drain the chicken meats and rinse them thoroughly under cold water to remove any remaining impurities. Transfer the rinsed chicken meats to an instant pot. Add the charred yellow onion, charred ginger piece, fennel seed, coriander, cloves, cinnamon sticks, and cardamom pods to the instant pot. Cover all ingredients with water.

Secure the lid on the instant pot and cook on high pressure for 3 hours.

Once the cooking cycle is complete, allow the pressure to release naturally. Do not use the quick release function, as a slow release helps prevent the broth from becoming cloudy by emulsifying fats.

Strain the broth through a fine-mesh sieve, discarding the solids. The broth is now ready to be portioned and stored, or seasoned for immediate serving.
