Preheat your oven to 350°F (175°C).

In a 10-inch cast iron skillet or an oven-safe baking dish, melt the 5 tablespoons of unsalted butter over medium heat. Add the 3/4 cup of brown sugar and stir until it dissolves and combines with the butter to form a caramel sauce. Remove from heat.

Arrange the sliced bananas in a single, even layer over the caramel mixture in the skillet. Set aside.

In a large mixing bowl, combine the cubed brioche and cubed baguette. Toss gently to mix the two types of bread.

In a separate medium bowl, whisk together the 5 large eggs, 1 cup of milk, 1 cup of heavy cream, 1 cup of granulated sugar, the 2 mashed bananas, and 1 teaspoon of vanilla extract. Whisk until all ingredients are well combined and the mixture is smooth.

Pour the prepared custard mixture over the cubed bread in the large bowl. Gently toss the bread cubes to ensure they are thoroughly coated and soaked in the custard. Let it sit for 5 minutes to allow the bread to absorb the liquid.

Evenly pour the custard-soaked bread mixture over the layer of sliced bananas in the cast iron skillet.

Bake the assembled pudding in the preheated oven for 45 minutes, or until the top is golden brown and the pudding is set in the center.

Once baked, carefully remove the skillet from the oven. Let it cool for 5-10 minutes before inverting. Place a large serving plate over the skillet and, using oven mitts, carefully flip the skillet and plate together to invert the pudding onto the serving plate.

Serve warm, topped with a scoop of banana pudding, as needed.
