Preheat your oven to 400°F. Line a baking sheet with aluminum foil.

Place the cut red onion halves and garlic head halves on the prepared baking sheet. Drizzle generously with 2 tablespoons of olive oil, then season with 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper.

Wrap the garlic and onion tightly in individual aluminum foil packets. Ensure they are completely sealed to steam while roasting.

Roast the foil-wrapped garlic and onions in the preheated oven for 45 minutes, or until they are very soft and caramelized. The garlic cloves should be golden brown and easily squeezable.

Carefully remove the packets from the oven and let them cool for about 10 minutes. Once cool enough to handle, squeeze the soft roasted garlic cloves from their skins into a medium-sized mixing bowl. Peel the tender roasted red onion and add it to the same bowl.

Add the softened cream cheese, mayonnaise, chopped fresh parsley, chopped fresh cilantro, grated Parmesan cheese, and shredded mozzarella cheese to the bowl with the roasted garlic and onion. Season with 1/4 teaspoon of kosher salt and 1/8 teaspoon of black pepper.

Using a fork or a spatula, thoroughly mash and mix all ingredients together until a smooth, creamy, and well-combined spread is formed. Taste and adjust seasoning (salt and pepper) as needed.

Transfer the spread to a serving bowl. If desired, drizzle with an additional tablespoon of olive oil before serving. Serve immediately with toasted baguette slices, crackers, or garlic bread.
