Press the block of extra firm tofu to remove excess water. This can be done by wrapping the tofu in paper towels or a clean kitchen towel, placing it on a plate, and weighing it down with something heavy (like a cast iron skillet or a few cans) for at least 30 minutes. Once pressed, cut the tofu into bite-sized cubes.

In a medium bowl, add the pressed and cubed tofu. Sprinkle 2 tablespoons of cornstarch over the tofu and gently toss until each piece is evenly coated. Ensure there are no dry patches of cornstarch.

Preheat your air fryer to 400°F. Arrange the coated tofu cubes in a single layer in the air fryer basket, ensuring not to overcrowd it. Air fry for 15-20 minutes, flipping the tofu halfway through the cooking time (around 7-10 minutes) to achieve even crispiness and a golden-brown color.

In a separate medium bowl, combine the soy sauce, maple syrup, rice vinegar, sesame oil, garlic powder, ginger powder, 1 tablespoon of cornstarch, and 2 tablespoons of water. Whisk thoroughly until the mixture is smooth and the cornstarch is fully dissolved, with no lumps.

Once the tofu is crispy from the air fryer, transfer it to a large pan or skillet. Pour the prepared sauce over the tofu. Cook over medium heat, stirring continuously with a spatula or spoon, until the sauce begins to thicken to your desired consistency. This usually takes 2-4 minutes. The sauce should cling to the tofu.
