Place the slow cooker on a countertop and prepare for cooking.

Slice the 2 pounds of smoked sausage into rounds. Peel and slice the 1 yellow onion.

Place a frying pan on the stove top over medium-high heat. Add 1 tablespoon of oil to the pan. Once hot, add the sliced sausage and sliced onion to the pan. Sauté until the sausage is browned and the onion is softened, about 8-10 minutes.

While the sausage and onion are cooking, pour the 1 1/2 pounds of small yellow potatoes into a colander. Rinse the potatoes thoroughly under cold running water. Add the rinsed potatoes to the slow cooker.

Add 1 tablespoon of minced garlic to the pan with the sautéed sausage and onion. Stir well to combine and cook for 1 minute until fragrant.

Pour the cooked sausage, onion, and garlic mixture from the pan into the slow cooker, on top of the potatoes.

Place 1 stick of garlic and herb butter on top of the sausage and potato mixture in the slow cooker. Cover the slow cooker with its lid. Cook on low for 3 hours, or on high for 1 1/2 hours.

After the initial cooking time, carefully remove the lid. Add the 12 ounces of green beans to the slow cooker. Place 1/2 stick of plain butter on top of the green beans. Replace the lid and continue to cook on low for another 1 hour, or on high for 30 minutes, or until the potatoes and green beans are tender.

Once cooked, stir all ingredients together to combine the melted butter and flavors. Serve hot.
