Prepare the chia pudding: In a large bowl or airtight container, whisk together the oat milk, chia seeds, maple syrup, vanilla extract, and pinch of salt until well combined. Make sure there are no clumps of chia seeds.

Cover the bowl or container and refrigerate for at least 4 hours, or preferably overnight, until the pudding has thickened to a gel-like consistency. Stir occasionally during the first hour to prevent the chia seeds from settling.

While the chia pudding is chilling, prepare the berry compote. In a small saucepan, combine the mixed berries, maple syrup, and lemon juice. If using frozen berries, there's no need to thaw them first.

Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 5-7 minutes. Remove from heat and let cool completely. You can mash some of the berries with a fork for a smoother compote, or leave them chunky.
