Roughly chop the peeled and deveined prawns into a coarse paste-like mixture. Transfer the chopped prawns to a medium mixing bowl.

To the chopped prawn paste, add the minced garlic, minced ginger, thinly sliced scallions, mayonnaise, salt, and black pepper. Mix all the ingredients thoroughly until they are well combined and form a sticky, cohesive paste.

Take each slice of white sandwich bread and carefully trim off all the crusts. Cut each crustless bread slice diagonally to create two triangular pieces.

Take one bread triangle and spread a thick, even layer of the prepared prawn mixture over one side of the bread. Ensure the mixture extends all the way to the edges of the bread.

Gently press the prawn-coated side of the bread into a shallow dish filled with sesame seeds. Make sure the entire prawn mixture is generously covered with sesame seeds.

Heat the neutral oil in a deep pan or Dutch oven over medium-high heat until it reaches 350°F. The oil should be deep enough to submerge the prawn toast partially.

Carefully place a few assembled prawn toasts into the hot oil, prawn-side down first. Fry until the prawn mixture turns a golden brown color and appears cooked through (about 2-3 minutes).

Flip the toast over and fry the bread side until it is also golden brown and crispy (about 1-2 minutes). Repeat with remaining prawn toast, working in batches to avoid overcrowding the pan.

Once cooked, remove the fried prawn toast from the oil. Transfer the pieces to a wire rack or a plate lined with paper towels to drain any excess oil. Serve the hot Prawn Toast immediately with a side of chili sauce or your preferred dipping sauce.
