In a medium bowl, combine the cut chicken pieces with 1 tablespoon of oil, 1/2 teaspoon of salt, 1 tablespoon of smoked paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of black pepper, and 1 teaspoon of Cajun seasoning. Mix thoroughly until the chicken is evenly coated.

In a separate small bowl, combine 1/2 cup of mayonnaise, 1/2 cup of sour cream, 1 tablespoon of smoked paprika powder, 1 teaspoon of garlic powder, 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, 1 teaspoon of Cajun seasoning, 1 tablespoon of lime juice, 1 teaspoon of hot sauce, and 1 to 2 tablespoons of fresh chopped cilantro.
