Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, ensuring there is an overhang on the sides for easy removal later.

In a large bowl, whisk together the 1 cup of melted unsalted butter and 2 cups of granulated sugar until well combined.

Add 2 large eggs, 1 tablespoon of vanilla extract, and 1 teaspoon of red gel food coloring to the butter and sugar mixture. Whisk until the mixture is smooth and evenly colored.

Add 1/2 cup of unsweetened cocoa powder, 1 cup of all-purpose flour, and 1/2 teaspoon of salt to the wet mixture. Gently mix with a spatula until just combined, being careful not to overmix the batter.

Fold in 1 cup of chocolate chips until evenly distributed throughout the batter.

Pour the brownie batter into the prepared 9x13 inch baking pan and spread it evenly. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.

Allow the brownies to cool completely in the pan on a wire rack before proceeding. This will take approximately 60 minutes.

In a separate large bowl, use an electric mixer to beat 1/2 cup of softened unsalted butter and 8 oz of softened cream cheese until the mixture is light and fluffy.

Gradually add 2 cups of powdered sugar and 1 teaspoon of vanilla extract to the cream cheese mixture. Continue beating with the electric mixer until the frosting is smooth and creamy.

Once the brownies are completely cool, spread the cream cheese frosting evenly over the top.
Chill the frosted brownies in the refrigerator for at least 30 minutes before slicing and serving.
