Preheat your oven to 350°F. Grease a 9x13-inch baking pan, or two 8x8-inch pans, as needed.

In a large bowl, combine the yellow cake mix, sour cream, large eggs, vegetable oil, and the optional vanilla extract. Mix thoroughly until the batter is smooth and well combined.

In a separate medium bowl, combine the brown sugar, ground cinnamon, and all-purpose flour. Add the cubed cold butter and use a fork or pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.

Spread half of the prepared cake batter evenly into the bottom of the greased pan. Sprinkle half of the cinnamon streusel mixture over the batter. Carefully spoon the remaining cake batter over the streusel layer, then top with the rest of the streusel mixture.

Bake the coffee cake for 30 to 38 minutes, or until a toothpick inserted into the center comes out clean.

If desired, once the cake has cooled completely, prepare the optional glaze. Whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle the glaze evenly over the cooled coffee cake.
