Preheat your oven to 375°F (190°C).

Wash, core, and dice the apples into small, bite-sized pieces, leaving the skin on for color and added nutrition.

In a 9x13 inch baking dish, combine the rolled oats, diced apples, plain Greek yogurt, large eggs, ground cinnamon, packed light brown sugar, milk, and salt.

Mix all ingredients thoroughly with a spoon or spatula until well combined and the oats are evenly coated with the wet ingredients.

Bake for 35 to 40 minutes, or until the oatmeal is set, golden brown on top, and a toothpick inserted into the center comes out mostly clean. The edges should be slightly firm.

Remove from the oven and let cool slightly before serving. This allows the oatmeal to set further and makes it easier to scoop.
