Preheat your oven to 160 degrees C. Line a baking tray with parchment paper.

In a medium heat-proof mixing bowl, combine the sesame seeds, sunflower seeds, pepitas, flaxseeds, ground flaxseeds, chia seeds, and salt. Stir well to combine.

Add the boiling water to the seed mixture and stir until thoroughly combined. Let the mixture sit for 2 minutes to allow the seeds to absorb some of the water, then stir once more.

Turn the batter out onto the prepared baking sheet. Using a silicone spatula or a wooden spoon, spread the batter out into a very thin, even layer to cover the entire baking sheet. If your baking sheet is small, you may need to bake in batches.

Bake for 45-55 minutes, or until the center of the cracker is crisp and has mostly hardened. The edges should be golden brown.

Once baked, turn off the oven and allow the crackers to cool completely inside the oven. This helps them become extra crisp. This cooling process can take 1-2 hours.

Once cooled, break the large cracker into your preferred size pieces. Store the crackers in an airtight container at room temperature.
