Divide the ground beef into 4 equal portions. Gently form each portion into a 1/2-inch thick patty, slightly wider than your hamburger buns, as they will shrink during cooking. Create a small indentation in the center of each patty to prevent it from bulging.

To create the bacon pinwheel, take 3 slices of bacon for each patty. Lay the bacon slices side-by-side, slightly overlapping, on a clean surface. Place a burger patty at one end of the bacon strips and carefully roll the patty, wrapping the bacon around its circumference. Secure the ends of the bacon with toothpicks if necessary to keep them in place.

Generously coat all sides of each bacon-wrapped burger with McCormick Grill Mates Montreal Steak Seasoning. Ensure an even layer for maximum flavor.

Preheat your grill or smoker to 325°F. Once the grill is at temperature, place the bacon pinwheel burgers directly on the grates. Close the lid and smoke until the internal temperature reaches 160°F for medium-well, or 165°F for well-done. This will take approximately 40-50 minutes, depending on your grill and the thickness of the burgers. If adding cheese, place a slice on each burger during the last 5 minutes of cooking to allow it to melt.

Once the burgers reach the desired internal temperature, carefully remove them from the grill. Let them rest for 5 minutes before serving to allow the juices to redistribute.
