Prepare the onion: Using a mandoline or a very sharp knife, thinly slice the white onion into very thin rings. Set aside.

Form the patties: Divide the ground beef into 8 equal portions (approximately 3 ounces each). Take one portion of ground beef and flatten it slightly. Place a thin onion ring on top of the beef. Use a burger patty press or your hands to press the onion ring firmly into the ground beef, forming a thin burger patty with the onion embedded. Repeat this process for all 8 patties.

Season the patties: Season one side of each patty generously with salt and freshly ground black pepper.

Initial searing: Heat a large griddle or heavy-bottomed skillet over medium-high heat until hot. Place the seasoned side of the patties down onto the hot griddle. Cook for 3-4 minutes until a good crust has formed.

Season and flip: While the first side sears, season the top side of the patties with salt and pepper. Once a good crust has formed, use a sturdy spatula to carefully flip the patties.

Add cheese: Immediately place one slice of American cheese on top of each flipped, cooking patty.

Melt the cheese: Place a metal dome or a large lid over the patties on the griddle to help the cheese melt quickly and evenly. Continue cooking for another 2-3 minutes, or until the cheese is fully melted and the patties are cooked to your desired doneness.

Toast the buns: While the patties are cooking, place the burger buns, cut-side down, onto an empty section of the hot griddle. Toast until golden brown, about 1-2 minutes.

Remove from heat: Once the buns are toasted and the cheese is melted on the patties, remove both from the griddle and set aside.

Assemble the burger: Start with the bottom half of a toasted bun. Spread a generous layer of burger sauce onto the bottom bun. Place a few pieces of lettuce on top of the sauce, followed by slices of tomato, and then arrange pickle slices over the tomatoes.

Complete assembly: Place one cheeseburger patty on the pickles, then add a second cheeseburger patty on top for a double burger. Finish by placing the top bun to complete the burger. Repeat for the remaining burgers. Serve immediately, optionally cut in half.
