In a medium bowl, combine the vanilla protein powder and zero-calorie sweetener. Whisk thoroughly to ensure there are no clumps.

Gradually add cold water to the protein and sweetener mixture, mixing continuously until it reaches a thick, icing-like consistency. Start with a small amount and add more as needed.

Add the entire container of fat-free Cool Whip to the mixture. Gently fold to combine, being careful not to overmix, which can deflate the Cool Whip and reduce the airy texture.

Add the 2 ounces of crushed Fruity Pebbles to the mixture. Gently fold them in until just combined. Again, avoid overmixing to maintain the light and airy consistency.

Prepare your ice cream bar molds by inserting popsicle sticks into each slot. Ensure the sticks are centered and secure.

Divide the Fruity Pebble mixture evenly among the 4 ice cream bar molds. Gently press the mixture down around the popsicle sticks to ensure they are well-embedded.

Place the filled molds in the freezer and freeze for at least 3 hours, or until the bars are completely solid.

Once frozen, carefully remove the bars from their molds. At this point, they can be enjoyed as is.

For an optional extra Fruity Pebbles crunch, gently roll or press the frozen bars into additional crushed Fruity Pebbles to coat them.

If coated, place the bars back in the freezer for a short period, about 15 minutes, to set the coating.
