In a medium bowl, combine the thick plain Greek yogurt, cocoa powder, chia seeds, sweetener to taste (such as maple syrup), and milk (such as oat milk). Mix thoroughly until all ingredients are well incorporated and the mixture is smooth.

Divide the mousse mixture evenly among small ramekins or bowls.

In a microwave-safe bowl, melt the Biscoff spread. This can be done in 15-second intervals, stirring in between, until smooth and pourable.

Add the protein crisps to the melted Biscoff spread and stir gently to combine.

Carefully drizzle the Biscoff and protein crisp mixture over the top of each mousse portion, allowing it to spread and form a shell.

Refrigerate the mousses for at least 4 hours, or preferably overnight, to allow the chia seeds to swell and the mousse to set.
