Cook the elbow macaroni according to the package instructions until al dente. Once cooked, drain thoroughly and set aside.

In a large saucepan or pot, melt the 2 heaping tablespoons of butter over medium heat.

Add the 2 heaping tablespoons of all-purpose flour to the melted butter. Cook for about 1 minute, stirring constantly, to form a roux. Ensure the flour is fully incorporated and cooked to remove any raw flour taste.

Gradually pour in the 2 1/2 cups of milk, whisking continuously to prevent lumps. Continue whisking until the mixture is smooth and begins to thicken into a creamy sauce.

Stir in the 1/2 teaspoon of salt, 1 cup of shredded burger cheese, and 1 cup of shredded cheddar cheese. Continue stirring until all the cheese is completely melted and the sauce is smooth and uniform.

Add the cooked and drained elbow macaroni to the cheese sauce. Mix thoroughly until the pasta is well coated with the creamy cheese sauce.
