Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 8-10 minutes, or until the vegetables are softened and the onion is translucent.

Add the minced garlic and cook for another 1 minute until fragrant, being careful not to burn it.

Stir in the rinsed red lentils, ground cumin, and turmeric powder. Cook for 2-3 minutes, stirring constantly, to lightly toast the spices and lentils.
Pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are very tender and have broken down.

Remove the pot from the heat. Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer the soup in batches to a regular blender and blend until smooth (be cautious when blending hot liquids).

Return the soup to the pot (if using a regular blender). Stir in the salt and black pepper. Taste and adjust seasonings as needed.

Ladle the hot soup into bowls. Drizzle with fresh lemon juice and garnish with chopped fresh parsley. Serve immediately with toasted or fried pita bread on the side.
