Add 2 cups of fresh water (or chicken broth) to the rinsed rice in the rice cooker pot.

Prepare the other ingredients: slice the 4 to 5 shiitake mushrooms, slice the 2 to 3 Chinese sausages (lap cheung), and chop the 2 boneless chicken thighs.

In a separate bowl, combine the chopped chicken, sliced Chinese sausage, and sliced shiitake mushrooms.

Add all the marinade ingredients to the bowl with the meat and mushrooms: 2 tablespoons soy sauce, 1 teaspoon dark soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, 1 teaspoon sugar, 1/2 teaspoon white pepper, 2 teaspoons cornstarch, and a splash of water.

Mix everything thoroughly with chopsticks until the ingredients are well coated.

Add the marinated mixture (chicken, sausage, and mushrooms) directly on top of the rice in the rice cooker pot. Do not mix it into the rice.

Close the lid of the rice cooker and cook as you normally would. The meat and mushrooms will cook together with the rice. This typically takes about 20-25 minutes, depending on your rice cooker.

Once the rice cooker finishes cooking, open the lid. The ingredients will be cooked, and the flavors will have soaked into the rice, creating a savory, slightly smoky, and slightly sweet aroma.
