Finely chop the white part of the Japanese long onion. Thinly slice the green part of the Japanese long onion and set aside for garnish.

In a medium bowl, combine all sauce ingredients: sugar, cooking sake, soy sauce, tianmianjiang, doubanjiang, and chicken soup powder. Mix well until thoroughly combined.

Heat sesame oil in a large frying pan over medium heat. Add the minced garlic and minced ginger and cook, stirring frequently, until fragrant, about 1 minute.

Add the ground meat to the frying pan and cook, breaking it apart with a spoon, until it is no longer pink and has started to brown. Then, add the finely chopped white part of the onion and cook for another 1-2 minutes until slightly softened.

Pour the prepared sauce mixture into the pan with the meat and onion. Increase the heat to high and cook for about 5 minutes, stirring occasionally, allowing the sauce to thicken slightly and the flavors to meld.

Carefully place the entire block of tofu (without cutting) right in the center of the pan on top of the meat and sauce mixture. Reduce heat to medium-low, cover, and let it simmer for a short while, about 3-5 minutes, allowing the tofu to heat through and absorb some of the flavors.

Remove the lid and sprinkle the thinly sliced green onion (the green part) on top of the dish.

Serve hot. To eat, break the tofu apart with a spoon directly in the pan or on individual plates, allowing the sauce to seep into all the uneven edges of the tofu. Enjoy with rice.
