Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.

In a large bowl, mash the 2 large overripe bananas until smooth.

Add the 1 cup (225g) of cottage cheese, 2 large eggs, 1/3 cup (65g) of packed brown sugar, 1/4 cup (60ml) of neutral oil, and 1 teaspoon of vanilla extract to the mashed bananas.

Whisk all these wet ingredients together thoroughly until the mixture is smooth and well combined.

In a separate bowl, combine the 2 cups (240g) of all-purpose flour, 1 teaspoon of cinnamon, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of kosher salt.

Whisk all the dry ingredients together until well combined.

Pour the dry ingredients into the wet ingredients bowl. Mix until just combined, being careful not to overmix.

If desired, add 1/3 cup (55g) of mini chocolate chips to the batter and gently fold them in.

Scoop the batter evenly into each prepared muffin cup, filling each about two-thirds full.

Top each muffin with a few extra mini chocolate chips, if desired.

Bake the muffins for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely before serving.
