In a medium bowl, whisk together the soy sauce, beef broth, brown sugar, rice vinegar, sesame oil, minced garlic, and grated fresh ginger. In a small separate bowl, whisk together the cornstarch and 2 tablespoons of water to create a slurry. Set both aside.

Heat the olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

Add the broccoli florets to the skillet with the cooked ground beef. Stir-fry for 3-5 minutes, until the broccoli is tender-crisp. If desired, add 1-2 tablespoons of water and cover for a minute or two to steam the broccoli slightly.

Give the prepared garlic sauce a quick whisk, then pour it over the beef and broccoli in the skillet. Bring to a simmer. Stir in the cornstarch slurry and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.

Remove from heat. Serve the broccoli beef stir-fry immediately over hot cooked white rice. Garnish with sesame seeds and sliced green onions, if desired.
