Preheat your oven to 375°F (190°C). Grease a 13x9 inch baking dish with butter.

Arrange the cut croissant pieces evenly in the bottom of the prepared baking dish.

Sprinkle the chopped deli ham over the croissants. Then, evenly distribute the shredded Monterey Jack cheese and Gruyere cheese over the ham and croissants.

In a large bowl, whisk together the eggs, whole milk, garlic powder, onion powder, dried thyme, salt, and black pepper until well combined.

Pour the egg mixture evenly over the croissant, ham, and cheese layers in the baking dish. Gently press down on the croissants to ensure they are well saturated with the egg mixture.

Bake for 35-40 minutes, or until the casserole is golden brown and the eggs are set in the center. A knife inserted into the center should come out clean.
