Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easy cleanup.

Unroll the Pillsbury pizza crust onto a clean cutting board. Using a pizza cutter or sharp knife, slice the dough into 8 long, thin strips, approximately 1 inch wide.

In a small bowl, combine the melted unsalted butter, minced garlic, and optional chopped fresh parsley. Stir well to combine.

Take each pre-cooked meatball and carefully make a small incision or hole in the center. Insert one small cube of mozzarella cheese into each meatball, then gently reshape the meatball to fully enclose the cheese.

To assemble the skewers, take one strip of pizza dough. Thread one end of the dough onto a wooden skewer. Then, thread a cheese-stuffed meatball onto the skewer. Wrap the dough around the meatball in a spiral or 'S' shape, then thread another meatball. Repeat this process until you have 3 meatballs and the dough wrapped around them on each skewer, using the entire dough strip. Place the assembled skewers onto the prepared baking sheet.

Using a pastry brush, generously brush the dough and meatballs on each skewer with the garlic butter mixture.

Bake the skewers for 12 to 15 minutes, or until the pizza dough is golden brown and cooked through, and the meatballs are heated through and the cheese is melted and bubbly.

Once baked, remove the skewers from the oven. Immediately brush them with any remaining garlic butter. Sprinkle generously with grated Parmesan cheese.

Serve the Garlic Butter Meatball Subs on a Stick hot with a side of warm marinara sauce for dipping.
