Add the Gruyère to a food processor and pulse until finely crumbed.

Add the cold, cubed butter and plain flour to the food processor. Mix until the texture resembles coarse crumbs.

Add the egg yolk, fresh thyme leaves, salt, black pepper, and Piment d'Espelette (or paprika with a pinch of cayenne) to the food processor. Blitz until a dough forms.

Roll the dough into a log, wrap it tightly in plastic wrap, and place it in the fridge to chill for 30 minutes. This will make it easier to slice.

While the dough is chilling, preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.

Once chilled, remove the dough log from the fridge and slice it into rounds, approximately 1/4-inch thick. Place the rounds on the prepared lined baking tray, leaving a little space between each cracker. This recipe makes approximately 15 crackers.

Bake the crackers for 12-15 minutes, or until they are golden brown and crisp. Keep an eye on them to prevent burning.

Remove the crackers from the oven and let them cool completely on a wire rack before serving. They will crisp up further as they cool.

To prepare the whipped goat cheese dip, add the soft goat’s cheese, Greek yoghurt (or dollop cream), olive oil, honey (if using), fresh thyme leaves, a pinch of salt, and a pinch of black pepper to a blender.

Blitz all the dip ingredients until the mixture is smooth and creamy. Taste and adjust seasoning as needed.

Serve the cooled Gruyère & Thyme Crackers with the whipped goat cheese dip.
