Remove the membrane from the back of the pork ribs. Use a paper towel to grip and pull it off. Trim any excess fat or small, loose pieces from the ribs. Cut the full rack of ribs into two smaller, more manageable racks.

In a small bowl, combine paprika, garlic powder, onion powder, salt, black pepper, brown sugar, and cayenne pepper (if using) to create the seasoning blend. Apply a layer of mustard to both sides of the ribs, rubbing it in thoroughly. This acts as a binder for the seasoning. Generously apply the seasoning blend to all sides of the ribs, ensuring full coverage.

Preheat your smoker or oven to 275°F. Place the seasoned ribs directly onto the smoker or in the oven. For the first 2 hours of cooking, spritz the ribs with apple juice every 30 minutes.

Lay out two large pieces of aluminum foil, overlapping them slightly to create a strong seal. Place several slices of butter on the foil where the ribs will sit. Sprinkle a generous amount of brown sugar over the butter. Drizzle honey over the brown sugar. Place the ribs meat-side down on top of the butter, brown sugar, and honey mixture. Add more butter slices, sprinkle more brown sugar, and drizzle more honey over the bone side of the ribs. Wrap the ribs tightly in the aluminum foil, creating a sealed packet.

Return the wrapped ribs to the smoker or oven, maintaining the temperature at 275°F. Cook for an additional 2 hours.

Carefully remove the wrapped ribs from the smoker/oven and unwrap them, discarding the foil. Place the ribs back on the smoker or oven. Liberally apply BBQ sauce to both sides of the ribs.

Continue cooking the sauced ribs for another 1 hour.

Once cooked, remove the ribs from the smoker/oven. Allow the ribs to rest for 10-15 minutes before slicing and serving.
