Preheat your oven to 180 degrees Celsius. Lightly grease a baking dish suitable for the pudding.

In a large bowl, whisk together the milk, oil, egg, and 1/3 cup of brown sugar until the mixture is well combined and smooth.

Add the dry ingredients to the wet mixture: the flour, baking powder, salt, and any optional spices (cinnamon, ginger, or nutmeg). Mix gently until just combined. Be careful not to overmix; a few lumps are fine.

Pour the pudding batter evenly into the prepared baking dish, spreading it out with a spatula if needed.

Evenly sprinkle the 1 cup of brown sugar over the top of the batter in the baking dish.

Carefully pour the 3/4 cup of water over the brown sugar and batter. Do not stir.

Bake in the preheated oven for 25-30 minutes, or until the sponge is cooked through, has risen to the top, and is golden brown. The sauce will be bubbling around the edges.

Once baked, remove the pudding from the oven and let it sit for at least 5 minutes before serving. This allows the sauce to thicken slightly and the pudding to set.
