Begin by preparing your pine needles. Carefully clean them to remove any debris. Using a sharp knife, finely chop the pine needles. This will help release their aromatic oils during simmering.

In a small saucepan, combine the chopped pine needles, 1 cup of water, and the granulated sugar. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar is fully dissolved.

Once the sugar is dissolved and the mixture is simmering, remove the saucepan from the heat. Cover it and let the pine needle syrup steep for 10 minutes to allow the flavors to infuse deeply.

After steeping, strain the syrup through a fine-mesh sieve into a clean jar or bowl, pressing gently on the pine needles to extract all the liquid. Discard the spent pine needles. Allow the syrup to cool completely to room temperature, then chill in the refrigerator until cold.

To assemble the refresher, combine the chilled pine needle syrup and fresh lemon juice in a large pitcher or serving carafe. Stir well to combine.

Just before serving, add the chilled sparkling water to the pitcher and stir gently. Fill individual serving glasses with ice cubes, then pour the sparkling pine needle and lemon refresher over the ice. Garnish each glass with a fresh lemon slice and a small pine sprig for an elegant touch.
