Bring a medium pot of water to a rolling boil for the eggs. Gently lower the eggs into the boiling water using a slotted spoon. Cook for exactly 6 minutes for soft-boiled eggs. While eggs are cooking, prepare an ice bath in a medium bowl.

Immediately transfer the cooked eggs from the boiling water to the ice bath. Let them cool for at least 5 minutes. This stops the cooking process and makes them easier to peel.

While the eggs are cooling, pat the sirloin steak dry with paper towels and season generously with salt and pepper. Heat a large skillet over medium-high heat. Once hot, add the steak and sear for 3-4 minutes per side for medium-rare, or until desired doneness is reached. Remove from skillet and let rest on a cutting board.

Bring a large pot of water to a rolling boil for the ramen noodles. Add the ramen noodles and cook according to package directions, usually 2-3 minutes. Before draining, reserve 6 cups of the hot noodle cooking water. Drain the noodles and set aside.

While the noodles are cooking, prepare the creamy broth. In a large bowl, combine the chicken bouillon, caramelized onion seasoning, egg yolks, chopped garlic, Greek yogurt, and 2 tablespoons of chili crunch. Gradually whisk in the 6 cups of hot reserved noodle cooking water, stirring continuously until the mixture is smooth and well combined.

Slice the rested sirloin steak against the grain into thin strips. Peel the cooled soft-boiled eggs and slice them in half lengthwise.

Divide the cooked ramen noodles among four serving bowls. Pour an equal amount of the creamy broth over the noodles in each bowl. Arrange the sliced steak and halved soft-boiled eggs on top of the noodles. Garnish with additional chili crunch and chopped scallions.

Serve immediately and enjoy your warm, comforting bowl of creamy ramen.
