Dice the chicken breast into bite-sized pieces. Season the diced chicken with 1 teaspoon of Italian seasoning, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Heat a large skillet or pot over medium-high heat. Cook the seasoned chicken until it is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add a small amount of olive oil if needed. Add the diced onion, diced red bell pepper, chopped sun-dried tomatoes, and minced garlic. Sauté for 3-5 minutes until the vegetables soften. Stir in the dry orzo pasta and toast for 1-2 minutes, stirring constantly, until lightly golden.

Pour in the chicken broth and return the cooked chicken to the skillet. Stir well. Bring the mixture to a simmer, then reduce the heat to low, cover the skillet, and cook for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

Remove the skillet from the heat. Stir in the reduced-fat cream cheese, grated Parmesan cheese, and baby spinach. Continue to stir until the cream cheese is melted and the spinach has wilted, creating a creamy sauce.

Taste and adjust seasoning with the remaining 1 teaspoon of Italian seasoning, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper, if desired. Divide the Tuscan chicken orzo into 4 equal servings. Serve immediately or store in an airtight container for meal prep.
