To prepare the nori paste, combine the torn nori sheets, chopped garlic cloves, soy sauce, sesame oil, water, 1/4 teaspoon of salt, and 1/4 teaspoon of granulated sugar in a blender. Blend until a smooth, vibrant green paste is formed. Set aside.

Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Before draining, reserve 1/2 cup of the starchy pasta water. Drain the cooked pasta and set aside.

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet or pan over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, or until they are golden brown and tender. Add the white parts of the chopped spring onion and sauté for an additional 1-2 minutes until fragrant.

Reduce the heat to low. Add the prepared nori paste to the skillet with the mushrooms and spring onion. Stir well to combine.

Add the cooked and drained pasta to the skillet. Pour in the reserved pasta water and add the 1 tablespoon of unsalted butter. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, or to taste.

Toss everything thoroughly using tongs, ensuring the pasta is evenly coated with the creamy nori butter sauce. Continue to toss for 1-2 minutes until the sauce has emulsified and coats the pasta beautifully.

Transfer the nori butter pasta to serving dishes. Garnish generously with the green parts of the chopped spring onion before serving immediately.
