Heat 2 tablespoons of coconut oil in a large skillet or pot over medium heat. Add the diced yellow onion and sauté until softened, about 5 minutes.

Stir in 1 tablespoon of grated fresh ginger and 1 tablespoon of minced fresh garlic. Cook for 1 minute until fragrant.

Add 1 tablespoon of red curry paste, 1 teaspoon of turmeric, 1 teaspoon of cumin, and 1 teaspoon of coriander. Stir well to combine with the aromatics and cook for 1 to 2 minutes, allowing the spices to toast.

Pour in 1 (13.5 ounce) can of full-fat coconut milk and 1/2 cup of chicken or vegetable broth. Bring the mixture to a simmer.

Add 1 tablespoon of brown sugar, 1 tablespoon of fish sauce, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir until well combined.

Gently place the 1 pound Chilean seabass fillets (skin on) into the simmering sauce. Cover the skillet and cook for 10 to 12 minutes, or until the fish is flaky and cooked through.

Stir in 1 cup of halved cherry tomatoes during the last 2 minutes of cooking.

Remove the skillet from heat. Garnish with 1/2 cup of fresh chopped cilantro. Serve immediately with steamed rice.
