Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large mixing bowl, cream together the softened unsalted butter and confectioners' sugar using a whisk or an electric mixer until the mixture is pale yellow, light, and fluffy.

In a small separate bowl, dissolve the instant coffee granules in the hot water. Stir until a thick, syrupy coffee concentrate is formed.

Pour the dissolved coffee concentrate into the creamed butter and sugar mixture. Whisk again until the coffee is fully incorporated and the mixture turns a uniform light brown color.

Add the graham cracker crumbs and mini chocolate chips to the coffee-butter mixture. Use a spatula to mix all the ingredients together until a cohesive, slightly crumbly but moldable dough is formed.

Portion the dough and roll it into small, uniform, bite-sized balls, about 1 inch in diameter. Arrange the cookie dough balls neatly on the prepared baking sheet, leaving about 1 inch between each cookie.

Bake for 12-15 minutes, or until the cookies are golden-brown around the edges and slightly firmer to the touch.

Remove the baking sheet from the oven and let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Serve the mini coffee cookie bites in a serving bowl, perhaps lined with parchment paper for presentation.
