Season the raw shrimp generously with 1 tablespoon of Cajun seasoning. Set aside.

Heat a large pan or Dutch oven over medium-high heat. Add the sliced andouille sausage and cook for 5-7 minutes, stirring occasionally, until browned and slightly crispy. Remove the sausage from the pan with a slotted spoon and set aside, leaving any rendered fat in the pan.

Add the seasoned shrimp to the same pan. Cook for 1-2 minutes per side until they turn pink and are cooked through. Do not overcrowd the pan; cook in batches if necessary. Remove the shrimp from the pan and set aside.

To the same pan, add the olive oil and butter. Once the butter is melted, add the diced yellow onion, red bell pepper, and green bell pepper. Sauté, stirring occasionally, for 5-7 minutes until the vegetables have softened.

Stir in the minced garlic and the remaining 1 tablespoon of Cajun seasoning. Continue to sauté for another minute until the garlic is fragrant.

Pour in the chicken broth. Use a spatula or wooden spoon to scrape the bottom of the pan, loosening any browned bits of food (fond) stuck to the surface. Bring the mixture to a gentle simmer.

Stir in the heavy cream and grated Parmesan cheese. Allow the sauce to simmer gently for 3-5 minutes, stirring occasionally, until it thickens slightly to your desired consistency.
Add the cooked pasta to the sauce in the pan. Toss thoroughly to ensure the pasta is evenly coated with the sauce.

Return the cooked shrimp and sausage to the pan. Toss everything together until all ingredients are well combined and heated through.

Taste and adjust seasoning as needed. Garnish with fresh chopped parsley before serving.
