Begin by pressing 300 grams of tofu to remove excess water. This can be done by wrapping the tofu in paper towels or a clean kitchen towel and placing a heavy object on top for at least 15 minutes.

In a large mixing bowl, crumble the pressed tofu. Add the large egg, 50 grams of potato starch, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 100 grams of shredded cabbage.

Mix all the ingredients thoroughly until well combined, forming a thick, batter-like consistency. Ensure the cabbage is evenly distributed throughout the mixture.

Heat a large non-stick pan with 2 tablespoons of oil over medium heat. Once the oil is shimmering, pour the Okonomiyaki mixture into the heated pan, shaping it into a round pancake, approximately 1-inch thick. You may need to cook in batches depending on your pan size.

Cook the Okonomiyaki for 5-7 minutes until the bottom side is golden brown and appears set. The edges should start to look firm.

Carefully flip the Okonomiyaki using a wide spatula and cook the other side for another 5-7 minutes until it is also golden brown and cooked through. The center should be firm to the touch.

Once cooked, transfer the Okonomiyaki to a serving plate. If cooking in batches, repeat steps 4-6.
