Using a microplane, zest 2 large or 3-4 smaller oranges to obtain 2 tablespoons of orange zest. Then, juice the same oranges to yield 1 cup of freshly squeezed orange juice. Set the orange juice aside.

To a medium-sized bowl, add the 1/2 cup of granulated sugar and the 2 tablespoons of orange zest.

Use your fingers to massage the sugar into the zest until the sugar is uniformly orange in color.

To a small saucepan over medium-low heat, add the zest and sugar mixture and the 1 cup of orange juice.

Heat the mixture to a gentle simmer, stirring occasionally until all of the sugar has dissolved.

Turn off the heat and let the zest steep in the syrup for at least 20 minutes, ideally until fully cooled.

Once cooled, strain the syrup through a fine mesh sieve to remove the zest.

Transfer the strained syrup to a mason jar or other storage container.

To prepare the soda, fill a glass with ice.

Pour the homemade orange soda syrup into the glass with ice, filling approximately 1/3 to 1/2 of the glass with syrup, or to your desired sweetness.

Top the syrup with sparkling water, stir, and enjoy.

Garnish with a piece of orange zest or an orange slice, if desired.
