Preheat your oven to 400°F. Arrange the hoagie rolls on a baking sheet.

Layer the hoagie rolls with your desired amount of ham, salami, and pepperoni.

Top the lunch meat with two slices of provolone cheese on each sandwich.

Bake the sandwiches in the preheated oven for a few minutes, or until the cheese is melted and bubbly.

While the sandwiches are baking, prepare the grinder salad. In a large bowl, combine the mayonnaise, red wine vinegar, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, dried oregano, Italian seasoning, garlic powder, and red pepper flakes. Stir well to combine.

Add the drained pepperoncinis peppers (or banana peppers), 1/3 cup of shredded Parmesan cheese, thinly sliced red onion, and shredded iceberg lettuce to the bowl with the dressing. Stir everything together thoroughly until the lettuce is well coated.

Once the sandwiches are out of the oven and the cheese is melted, sprinkle additional shredded Parmesan cheese over the hot sandwiches.

Arrange the sliced tomatoes on top of the sandwiches, seasoning them lightly with salt and pepper.

Generously spoon the prepared grinder salad mixture over each sandwich.
