Boil the pasta according to package instructions until al dente. Once cooked, rinse the pasta thoroughly with cold water to stop the cooking process and set aside.

While the pasta cooks, prepare the dressing. In a small blender, combine the cottage cheese, maple syrup, garlic cloves, rice vinegar, juice from the lime, and chili crisp (or salsa macha). Blend until the mixture is completely smooth. If the dressing is too thick, add water, 1 tablespoon at a time, until it reaches your desired consistency. Taste and adjust seasonings as needed, then set aside.

Prepare the chicken. Pat the chicken tenders dry with paper towels. Season them generously on all sides with smoked paprika, cumin, salt, and black pepper.
