Preheat your oven to 400°F. Slice the baguette into 1/2-inch rounds, arrange them on a baking sheet, and drizzle evenly with 1 tablespoon of olive oil. Bake for 10 minutes, or until golden brown and crispy. Set aside to cool.

Peel and thinly slice the yellow onions. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions, 1 tablespoon of butter, and 1/4 teaspoon of salt. Cook slowly, stirring occasionally and covering the pan, for 25 to 30 minutes, until the onions are deeply golden, soft, and caramelized. Set aside.

While the onions are caramelizing, cook the bacon slices in a separate pan until fully cooked, crispy, and browned. Remove from the pan, let cool slightly, then finely chop into small, crunchy pieces. Set aside.

Carefully remove the white rind from the Camembert cheese and cut the cheese into small cubes. Allow the cheese to come to room temperature for about 5 minutes to soften. Transfer the cheese cubes to a food processor and blend until you achieve a very smooth, creamy, and spreadable consistency, free of lumps.

To assemble, spread the creamy Camembert cheese evenly onto a serving plate or shallow bowl, forming a base. Pile the caramelized onions generously in the center of the cheese spread. Sprinkle the chopped crispy bacon over the onions, then scatter the finely chopped fresh chives on top. Finish with a sprinkle of flaky sea salt and a generous drizzle of honey.
