Preheat your oven to 400°F (200°C). Peel all the cloves from the head of garlic. Place the peeled garlic cloves on a small baking sheet or in a small oven-safe dish. Drizzle generously with olive oil.

Roast the garlic in the preheated oven for 15-20 minutes, or until the cloves are golden brown, very soft, and fragrant. Remove from the oven and let cool slightly.

Transfer the roasted garlic cloves to a small bowl. Using a fork, mash the roasted garlic until it forms a smooth paste. Add the mayonnaise, lemon juice, salt, and black pepper to the mashed garlic. Mix all ingredients thoroughly until well combined and creamy. Set aside.

Slice each ciabatta roll in half horizontally. Place 2 slices of provolone cheese evenly over the cut surface of each ciabatta half. Place the cheesy ciabatta halves under a broiler or in a toaster oven set to broil, until the cheese is melted and bubbly and the bread is lightly toasted, about 2-3 minutes. Keep a close eye to prevent burning.

Heat a large skillet or cast-iron pan over medium-high heat. Add the shaved beef steak to the hot pan. Season with salt and black pepper as desired. Cook the steak, stirring occasionally, until it is browned and cooked through, about 3-5 minutes. Remove from heat.

To assemble the sandwiches, generously spread the prepared roasted garlic aioli on the inside of both toasted, cheesy ciabatta halves. Place a layer of fresh arugula on the bottom ciabatta half. Pile the cooked shaved steak on top of the arugula.

Place the top ciabatta half over the steak to complete each sandwich. Cut each sandwich in half and serve immediately.
