Cut the chicken thighs into approximately 1/2-inch wide strips. Place the chicken strips in a large mixing bowl.

Add the olive oil, ground cumin, paprika, ground coriander, garlic powder, ginger powder, ground turmeric, ground allspice, salt, and black pepper to the bowl with the chicken. Pour in the fresh lemon juice.

Mix all the ingredients thoroughly with your hands or a spoon until the chicken is completely coated with the marinade.

Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes to allow the flavors to meld. For best results, marinate overnight (8-12 hours).

Heat a large skillet or frying pan over medium heat. Once hot, add the marinated chicken strips in a single layer, working in batches if necessary to avoid overcrowding the pan. Cook for 10-15 minutes, stirring occasionally, until the chicken is fully cooked through and lightly browned.

To assemble the Chicken Shawarma Bowls, divide the hot yellow rice among four serving bowls. Top each bowl with a generous portion of the cooked chicken shawarma.

Arrange sliced cucumbers, sliced tomatoes, thinly sliced red onions, and shredded lettuce around the chicken in each bowl.

Drizzle each bowl with your preferred white sauce (such as tahini sauce or garlic yogurt sauce) just before serving.
